Vegetable Curry

Ingredients
  1. 1 can coconut milk
  2. 2-4 Tbsp. canola oil
  3. 1 large onion, diced
  4. 2 cloves garlic, crushed
  5. 1/2 large zucchini, cut into cubes
  6. 1/2 large eggplant, cut into cubes
  7. 2 medium russet potatoes, peeled and cubed
  8. 2 carrots, peeled thinly sliced
  9. 2-3 tomatoes
  10. 1 can chickpeas, rinsed and drained
  11. 6 oz. package button mushrooms, cleaned and sliced
  12. 1 tsp. cumin seeds (or 1/2 tsp. ground cumin)
  13. 1/2 tsp. mustard seeds
  14. 1/2 tsp. onion seeds
  15. 1 tsp. turmeric
  16. 6-8 curry leaves
  17. 1 dried red chili (or about 1/4 tsp. red chili flakes)
  18. salt, to taste
  19. 1 tsp. sugar
  20. Hot cooked Basmati rice, for serving
Instructions
  1. n a very large (4-quart) saucepan, heat a little of the canola oil. Add the onion and cook over medium-high heat until it starts to soften and becomes transparent. Add the garlic, cumin seeds, mustard and onion seeds, and the turmeric. Stir-fry until fragrant. Add the zucchini and eggplant. Continue cooking until they start to soften a bit. Add the potatoes, carrots, coconut milk, curry leaves and red chili. Cook on a low simmer until the veggies are just tender. Add the tomatoes, chickpeas and mushrooms. Add the sugar and salt, to taste. Serve over hot, cooked rice.
